Welcome to a wonderful world of fabrics!
There are many different types of fabric and canvas that can be used for your stitching. For cross-stitch, the most commonly used fabric is aida or evenweave cotton and evenweave linen which comes in various 'counts' - the number of threads per inch. (I know we are supposed to be fully metric now but the count numbers are too familiar, and easier to visualize, in the old-fashioned system, so bear with us!) As the name suggests, the number of warp and weft threads are the same and the number per inch determines the finished size of your design.
For surface embroidery, you need to stitch on a closer woven fabric such as sateen or twill and for tapestry there is a wide range of counts in mono, mono deluxe and doubles canvases for you to work on.
